The man behind Delmonico Steakhouse is world-renowned chef Emeril Lagasse, who has honed his flair for showmanship and boldly flavorful food at this shrine to premium beef. Sommelier Dylan Amos oversees the nearly 2,770-selection wine list, tapping a cellar of more than 15,000 bottles. There’s a wealth of California Cabernet, but the list also embraces France (especially Burgundy and Bordeaux), Italy, Australia and Oregon. The by-the-glass program is similarly structured, with international picks and a primary strength in California, including several premium pours available via Coravin. The late Joël Robuchon possessed a command of—and fascination with—global ingredients; this is reflected at the chef’s namesake restaurant in Las Vegas, which has been a Grand Award winner since 2009. Located at the MGM Grand (with three other Restaurant Award winners), the restaurant carries on this tradition, offering Robuchon’s distinctive take on French cuisine as well as a 1,600-selection wine list overseen by MGM Resorts wine director and Master Sommelier Douglas Kim. Drawing inspiration from Robuchon’s storied career, chef Eleazar Villanueva prepares a 15-course tasting menu ($525, with wine pairings available upon request, at several prices). Embracing a range of flavors and culinary techniques, the menu moves through dishes such as a chestnut velouté accented with cardamom, caramelized black cod with a Malabar peppercorn sauce (sourced from South India) and a spit-roasted duck dressed in Acacia honey.

Kim and the restaurant’s sommelier team oversee a 1,645-wine list with strengths in Burgundy, Bordeaux, Champagne, the Rhône Valley and California. Throughout the 12,500-bottle cellar are icons such as Château Lafite Rothschild and Joseph Drouhin. Even the by-the-glass program is star-studded, with selections like Antinori’s Tignanello and Louis Roederer’s Brut Champagne Cristal.

Restaurant Guy Savoy is closed for the month of July.
Broadcasting French food to foreign locations such as Las Vegas, Burgundy native Guy Savoy says, is a natural part of globalization. You can enjoy the benefits of this progress at the chef’s Grand Award–winning namesake restaurant at Caesars Palace, his only restaurant outside France. Restaurant Guy Savoy even offers something of a gateway to Paris (and not just through overlap in the menu with its sibling restaurant of the same name in Paris): Through its windows, guests have a view of Caesar Entertainment’s Paris Las Vegas casino-hotel and its replica of the Eiffel Tower.

Signature items such as the artichoke and black truffle soup with toasted mushroom brioche, now prepared by chef Nicolas Costagliola, have made the trip across the pond from the Paris restaurant, while certain items on the à la carte menu are unique to the United States. Expect offerings such as seared branzino with peas and morels, lobster with Okinawan potato and cabbage and seared Rohan duck breast with confit duck leg. There is also the prix-fixe 5 Star Celebration menu ($420 per person, and an additional $300 for wine pairings), which features some of the same dishes as the à la carte menu, as well as creations like Savoy’s langoustine with caviar and grapefruit. The restaurant also offers private cooking lessons overseen by Costagliola.

Wine director Andrew Hurley’s wine list looks primarily to France, with 2,800 selections (representing a 34,000-bottle inventory) and strengths in Burgundy, Bordeaux, the Rhône Valley, Champagne and the Loire Valley, as well as a strong showing from California. Expect well-known names throughout the list, including Louis Latour, Albert Bichot, Château Gruaud-Larose and many more. There are also exciting bottles from other international locations, like a vertical of Italy's Gaja Langhe Sorì San Lorenzo. Adding to its wine experiences, Retaurant Guy Savoy features the country’s only Krug Chef’s Table, a six-seat table where Costagliola provides 10 seasonal courses to pair specifically with Krug Champagne.

From chef, restaurateur and World Central Kitchen founder José Andrés, Bazaar Meat Las Vegas isn’t your typical steak house. Housed in the 1950s-built Sahara Las Vegas, this Best of Award of Excellence winner showcases stunning meat dishes from across the globe, with plenty from Andrés’ homeland, Spain. (The restaurant’s sibling location in Chicago also holds a Best of Award of Excellence.) The restaurant’s coffered ceilings and Turkish rugs set the stage for a wide range of steaks and other international delicacies.

Andrés’s menu features Wagyu beef from prefectures across Japan, as well as succulent suckling Spanish pig roasted on a spit. Signature dishes from across Andrés’ restaurants and career grace the menu, like the “Philly cheesesteak'' on fluffy “airbread,” the marinated liquid olives (an homage to Ferran Adrià’s famed El Bulli restaurant, where Andrés worked for a time) and the cotton candy foie gras. Classics from Spain and high-concept, tongue-in-cheek dishes take equal real estate on the menu, from Buffalo-style bison carpaccio to Andrés’ Rossejat pasta inspired by paella.

José Andrés Restaurants wine director Jordi Paronella and restaurant sommelier Lou Sentenat curate a 700-selection wine list predominantly composed of Spanish options and largely designed to complement meat dishes. These include choice verticals from the likes of Bodegas Vega Sicilia and Dominio de Pingus. If you're in the mood to explore beyond Spain, take a peek at the "Lesser-Known" varieties and appellations sections, which feature options such as Grolleau from France’s Anjou region and an Obaideh-Merwah blend from Lebanon.

Led by chef Mario Carbone, Rich Torrisi and Jeff Zalaznick, Major Food Group has emerged as a national leader in fine dining today. Within its portfolio is Grand Award winner the Grill in New York, new 2024 Award of Excellence winner Chateau ZZ’s in Miami and four Restaurant Award–winning Carbone restaurants across the country. These include a Las Vegas destination at MGM’s Aria Resort & Casino, which showcases Carbone hallmarks: fine Italian-American dining, a striking interior from designer Ken Fulk and an impressive wine list that includes some of Italy’s best.

Carbone’s menu looks to classic elements of Italian-American cuisine while updating them with his signature flair. Best of Award of Excellence
While more than 5,000 miles separate the vineyards of Germany from the lush hills of Thailand, these two countries share in a notable culinary tradition: the Rieslings of the former are frequently (and deliciously) paired with the cuisine of the latter. This pairing is central at Lotus of Siam, a culinary concept that has been showcasing chef and restaurateur Saipin Chutima’s family recipes for 25 years, matching Thai dishes with Germany-focused wine lists. The Lotus of Siam on Flamingo Road in Las Vegas, a Best of Award of Excellence winner, opened in 2017 after a storm damaged the original restaurant on Sahara Avenue, which is in the process of reopening. Another sibling location is located at the Red Rock Resort on Charleston Boulevard.

Chutima’s menu showcases northern Thai cuisine, with a focus on herbs and spices. This is on display in dishes like kang ka noon (a curry featuring jackfruit), nam prik (a chile sauce–based stir fry) and larb (a blend of meat, fresh herbs and vegetables), all of which can be served with a variety of proteins. Seafood is also well-represented, with options like the Penny ceviche (named for Chutima’s daughter, Lotus of Siam co-owner Penny Chua) and six preparations of Chilean sea bass. Guests will also find pad Thai, pad see ew and spicy drunken noodles on the menu.

Chua oversees the restaurant’s list of more than 550 wines, which represent an inventory of 3,500 bottles. Many German Rieslings are on offer, with bottles from leading wineries like Joh. Jos. Prüm, Dr. Loosen, and Selbach-Oster. These white wines encompass a range of prices and sweetness levels (a little sweetness can pleasantly counter the spiciness of some Thai dishes). Other notable offerings include Austrian Grüner Veltliners, California Chardonnays and Alsatian whites. A solid selection of California reds (primarily Pinot Noir and Cabernet Sauvignon) are available as well, with picks from Shafer, Purlieu, Kosta Browne and more.

Best of Award of Excellence
With Restaurant Award–winning Bourbon Steak restaurants across the United States, chef Michael Mina and his Mina Group team are well established as leaders in steak-house dining. But at the chef’s namesake Las Vegas flagship, a Best of Award of Excellence winner since 2007, the focus is largely on seafood, with many ingredients flown in daily.

Caviar, oysters (East and West Coast), Maine lobster, golden king crab and more are among raw bar offerings from executive chef Raj Dixit. He also prepares entrees like Kona blue prawns with young coconut and a sweet-and-sour mango slaw, Bolinas black cod with black truffle dashi and Ōra King Salmon with a tamarind–black garlic glaze. Guests can enjoy these in the main dining room or, Wednesday through Sunday, at the Garden Table in a private dining room within the Bellagio Conservatory ($195 per person for a set meal, $225 per person Fridays through Saturdays, and $115 for wine pairings).

Mina Group corporate wine director Jeremy Shanker has assembled more than 500 labels for the Michael Mina wine list, tapping an inventory of nearly 4,000 bottles. The primary focuses are on France (particularly Bordeaux, Burgundy and Champagne), California and Italy. Diners can expect picks from acclaimed wineries and domaines, including Champagne’s Billecart-Salmon, Burgundy’s Joseph Drouhin and Sonoma Chardonnay leader Marcassin. You’ll also find plenty if you’re looking to pair your seafood with a red, including a range of Pinot Noirs from Burgundy and California, as well as Napa Cabernets.

Best of Award of Excellence
One of the finest parts of the Las Vegas Strip is, of course, eye-catching views of the famed and glittering thoroughfare. You’ll find just that at Best of Award of Excellence winner RIVEA Las Vegas on the 64th floor of the Delano Las Vegas resort. You’ll also find an Italian-influenced French dining experience from one of the world’s best-known chefs, Alain Ducasse, also the owner of Grand Award winner Le Louis XV - Alain Ducasse in Monaco, Best of Award of Excellence winner Restaurant Le Meurice Alain Ducasse in Paris and Best of Award of Excellence winner Alain Ducasse at Morpheus within Macau’s City of Dreams hotel.

Chef Winnie Wong prepares a primarily French-cuisine menu with additional influences from Northern Italy. Smaller dishes include lobster risotto with chives and Parmesan, marinated sea bass with citrus and a charcuterie board of culatello, San Daniele and bresaola. Larger offerings encompass maple-leaf duck breast with Forelle pear, sea scallops with rainbow cauliflower, a cookpot of farmer’s vegetables and a 7-ounce pepper-crusted bison tenderloin. There are also several pizza and pasta options, including butternut squash and ricotta ravioli as well as a truffle pizza. Guests can select from a tasting menu ($160 per person) as well, which includes dishes like a “Rossini” Angus filet mignon and, for dessert, limoncello baba.

Wine director Douglas Kim oversees a list of about 1,050 labels, representing a 4,100-bottle cellar, on display behind a large glass wall in the dining room. (The sommelier team accesses bottles using ladders on a custom system of sliding rails.) The program’s main strengths are in France, particularly Bordeaux, Burgundy, the Rhône Valley and Champagne, as well as Italy. That includes bottles from leading names like Nicolas Feuillatte, Domaines des Comtes Lafon and Bruno Giacosa. California is also well-represented, with famed wineries like Kosta Browne and Raen. There’s an impressive selection of sweet wines, including Ports back to the early 1900s and Madeiras back to 1832.

There’s no shortage of steak houses in Las Vegas. But there aren’t many that offer Wagyu while hosting special dinners celebrating leading wineries like California’s Silver Oak and Twomey. Scotch 80 Prime, a Best of Award of Excellence winner since 2023, does just that within the Palms Casino Resort.

Altogether, the list features wines from more than 15 countries and 50 wine regions, including selections of Oregon Pinot Noir, Mosel Riesling, Brunello di Montalcino, Nebbiolo Langhe and more. The crown jewels in acclaimed chef Wolfgang Puck’s global empire are his Spago restaurants, including the chef’s Grand Award winners in Beverly Hills and Las Vegas. The latter is located within the Bellagio Hotel and Casino, where it joins other dining destinations such as Grand Award winner Picasso and Best of Award of Excellence winners Le Cirque and Michael Mina (featured above). Executive chef Matthew Broeze prepares dishes that draw from Californian cuisine, taking inspiration from Puck’s early career in Santa Monica. As at the Beverly Hills restaurant, the team at Spago by Wolfgang Puck pairs French techniques with Asian and Italian culinary elements. This is on display in dishes like Maryland blue crab cakes with a tomato–red pepper relish, Manchester Farms quail in a sambal glaze and agnolotti stuffed with English peas and mascarpone, as well as a selection of prime steaks off the grill.

Joining these dishes is an impressive list of nearly 500 wines and an inventory of more than 2,000 bottles, with strengths in France, California and Italy. The list is particularly strong in selections from Champagne, Burgundy, Bordeaux, Napa Valley and Tuscany, including rarer and older gems from some of the world’s best-known wineries: Salon Brut Blanc des Blancs Champagne Le Mesnil 2002, Domaine de la Romanée-Conti Montrachet 2006, Pétrus Pomerol 1971 and Penfolds Shiraz South Australia Grange 2014. With a roaring fire, wood-paneled walls, tall displays of wine bottles and a painting of a die showing six pips, T-Bones Chophouse & Lounge creates a characteristically Las Vegas atmosphere for enjoying fine steak-house dining. That’s not to mention its striking, onyx-lined bar.

True to its name, T-Bones’ menu is packed with beef. Chef Arnulfo Garcia and the kitchen team prepare a 14-ounce bone-in filet wet aged 35 days, a 22-ounce bone-in ribeye dry aged 21 days and a 14-ounce New York Strip from Colorado, along with the certified Kobe cuts on the menu. There’s also a selection of seafood dishes, like a 12-ounce lobster tail from Australia, day boat scallops, Faroe Islands salmon and more. Accompanying these are classic appetizers and sides, from crab cakes to creamed spinach to potato puree.

Working with sommeliers Michael Kothe and Edward Teming, wine director Harley Carbery oversees a 1,700-selection wine list that represents a whopping, 15,000-bottle cellar. Wally’s has come a long way from its start as a Los Angeles neighborhood liquor store in the 1960s. It is now a major wine and spirits retailer and auction house, and its Beverly Hills, California, restaurant earned a Grand Award in 2017. More recently, the Wally's team brought their elevated Californian-French cuisine and impressive wine programming to new locations in Santa Monica, California, and, in 2021, Resorts World Las Vegas, which is also home to Restaurant Award winners Aqua Seafood & Caviar Restaurant, Brezza, Carversteak and Genting Palace. A combination restaurant and specialty foods market, Wally's offers everything from pastas and prime cuts of beef to high-quality cheese, chocolate and caviar.

Wally’s executive chef Shawn Wallace offers a variety of dishes, including fresh salads, pizzas and hearty plates of seafood and meat. Wallace’s team uses truffles in a number of dishes, from shareable plates like truffle fries to the whole-roasted heritage chicken served with fingerling potatoes, broccolini and truffle Albufera sauce. There are also charcuterie and caviar menus (replete with domestic and international options), as well as a brunch menu with dishes like Wally's breakfast sandwich (a gourmand's version of a bacon, egg and cheese sandwich, served with frites), seasonal quiches, diner-style sandwiches and the eponymous Wally burger, which is made from American Wagyu and prepared with smoked gouda and caramelized onions.

Wine director John Peiser’s 1,600-wine list shows strengths in Burgundy, Champagne, Bordeaux, California and Italy. Among the 18,000 bottles in the cellar are vintage Champagnes from well-known names such as Billecart-Salmon, Dom Pérignon and Louis Roederer (large-format bottles are also available from these houses, among others). The Burgundy collection includes wines from Leflaive and Joseph Drouhin, and Bordeaux lovers can look forward to verticals of Pétrus, Château Margaux and Vieux Château Certan. Best of Award of Excellence winner Zuma offers contemporary Japanese dining at the Cosmopolitan Las Vegas. The concept comes from chef and restaurateur Rainer Becker, and—like its Restaurant Award winning sibling restaurants in New York, Boston and Miami—it offers delicately crafted sushi and izakaya-style plates to share, among other dishes.

The menu at Zuma draws from Becker’s experiences in Japan and passion for West Coast cuisine, represented by dishes that balance the intensity of ingredients with minimalist presentations and flavor combinations. This includes diverse sushi, sashimi, maki and robata (a culinary style similar to barbecue) options. Among these are signature dishes like Kurobuta pork belly skewers with yuzu, mustard and miso; black cod marinated in Saikyo miso, wrapped in a hoba leaf; and spicy beef tenderloin with sesame, red chile and sweet soy. Guests can mix and match dishes or select an omakase option ($138 to $168 per person).

A sushi destination wouldn’t be complete without Champagne, and Zuma puts this tried-and-true formula front and center. For the 380-wine program (representing a 1,800-bottle cellar), wine director Alexander Vahramian looks to celebrated Champagne houses like Krug and Louis Roederer. The list also features aromatic white wines that pair well with fish, including German Rieslings and New Zealand Sauvignon Blancs. There are also lighter reds, including Rhône blends from wineries like Domaine de la Charbonnière and Pinot Noir from Hawke’s Bay winery Craggy Range.
